Vanilla Pound Cake

Ingredients

  • 2 cups almond flour
  • 1/2 cup softened butter
  • 1 cup SumSweet+ Granular
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 2 oz warm cream cheese
  • 4 large eggs

Instructions

  1. Cut the butter into small squares and place in a mixing bowl with the cream cheese; cover and let sit out to warm and soften (or microwave 30 seconds).
  2. Preheat the oven to 350°F. Generously butter a bundt or loaf pan and set aside.
  3. Combine the almond flour and baking powder in a bowl; set aside.
  4. Beat the butter and cream cheese together until well combined.
  5. Add the SumSweet+ Granular, vanilla, and sour cream; beat well.
  6. Add the almond flour mixture and mix well, then beat in the eggs.
  7. Pour into the buttered pan and bake 50 minutes, until a toothpick comes out mostly clean with a few crumbs.
  8. For best results, cool completely at least 2 hours, preferably overnight, before removing from the pan (it may crumble if removed too soon).
