Pineapple-Pecan Cheesecake Parfait
A no-bake cheesecake parfait, diabetic- and keto-friendly, made with SumSweet+.
Ingredients
- 8 ounces cream cheese, softened
- 1/4 cup SumSweet+ Granular
- 1/2 cup heavy whipping cream
- 1 tsp vanilla flavor
- 1/4 cup pineapple chunks
- 1/4 cup chopped pecans
Instructions
- Mix the SumSweet+ and vanilla into the cream cheese until smooth.
- In a separate bowl, beat the heavy whipping cream until the mixer blades leave track marks. Fold it into the cream cheese mixture and combine.
- Layer pecans, cream, and pineapple until you reach the top of your glass. Keep refrigerated.
