Pineapple-Pecan Cheesecake Parfait

A no-bake cheesecake parfait, diabetic- and keto-friendly, made with SumSweet+.

Pineapple-Pecan Cheesecake Parfait

Ingredients

  • 8 ounces cream cheese, softened
  • 1/4 cup SumSweet+ Granular
  • 1/2 cup heavy whipping cream
  • 1 tsp vanilla flavor
  • 1/4 cup pineapple chunks
  • 1/4 cup chopped pecans

Instructions

  1. Mix the SumSweet+ and vanilla into the cream cheese until smooth.
  2. In a separate bowl, beat the heavy whipping cream until the mixer blades leave track marks. Fold it into the cream cheese mixture and combine.
  3. Layer pecans, cream, and pineapple until you reach the top of your glass. Keep refrigerated.
