Keto Corn Syrup Substitute
A thick, full-bodied homemade syrup that cooks up sweet, just like real corn syrup.
Ingredients
- 2 cups SumSweet+ Granular (16 oz / 450 g)
- 3/4 cup water (6 fl oz / 170 ml)
- 1/4 tsp cream of tartar
- 2 tsp lemon juice
- Pinch of salt
Instructions
- In a heavy-bottomed saucepan over medium heat, add the SumSweet+ Granular, water, cream of tartar, and lemon juice.
- Once the SumSweet dissolves, lower the heat and let the syrup simmer steadily until it reduces significantly and drips slowly off a spatula, roughly 15-20 minutes. Test by dropping a bit on a cold plate and chilling 10 minutes — if it's thick when cold, it's ready (about 230°F on a candy thermometer).
- Remove from heat and set the pot in a bowl of cold water to cool quickly. Once fully cooled, use as directed in your recipe.
- Store in an airtight container at room temperature for up to 3 months.
