Ingredients

  • 1/2 cup peanut butter
  • 2 tbsp coconut oil
  • 1/2 cup SumSweet+ Granular
  • 2 large eggs
  • 1 1/2 tsp pure vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup coconut flour
  • 1/2 cup SumFoods chocolate chips

Instructions

  1. Preheat the oven to 350°F. Line a cookie sheet with parchment or a silicone mat.
  2. Place the peanut butter, coconut oil, and SumSweet+ Granular in a mixing bowl. Beat on high until smooth.
  3. Add the eggs and vanilla and beat again until evenly combined.
  4. Sprinkle the baking soda, cinnamon, and salt over the top, then add the coconut flour. Beat until the mixture forms a smooth dough, scraping the bowl once or twice. Gently fold in the chocolate chips.
  5. Portion the dough by heaping tablespoons onto the prepared sheet. Lightly flatten each (they won't spread during baking).
  6. Bake 7 minutes, until slightly golden at the edges and lightly dry — they'll be very soft.
  7. Cool on the sheet 3 minutes, then transfer to a wire rack. Repeat with remaining dough.
