Chocolate Mayo Cake
A keto-friendly chocolate cake that's light, fluffy, and perfectly moist.
Ingredients
- 2 cups fine almond flour
- 2/3 cup unsweetened cocoa powder
- 1 1/4 tsp baking soda
- 1/4 tsp baking powder
- 3 eggs
- 1 2/3 cups SumSweet Granular
- 1 tsp vanilla extract
- 1 cup mayonnaise
- 1 1/3 cups water
Instructions
- Preheat the oven to 350°F. Coat two 9-inch round cake pans with non-stick spray and set aside.
- In a medium bowl, combine the almond flour, cocoa, baking soda, and baking powder; set aside.
- In a large bowl with an electric mixer on high, beat the eggs, SumSweet Granular, and vanilla for 3 minutes, until light and fluffy. Beat in the mayonnaise on low until blended. Alternately beat in the almond flour mixture and the water, beginning and ending with the flour mixture. Pour into the prepared pans.
- Bake 30 minutes, or until a toothpick inserted in the centers comes out clean. Cool on wire racks 10 minutes, remove from pans, and cool completely. Frost or dust with powdered SumSweet+ if desired.
Notes
Or bake in a 13x9-inch pan for about 40 minutes. Pairs well with Chocolate Buttercream Frosting.
