Caramel Pecan Clusters
Buttery sugar-free caramel folded with toasted pecans and dropped into clusters.
Ingredients
- 1/2 cup heavy cream
- 3/4 cup SumSweet+ Granular
- 1/2 tsp vanilla extract
- 1 cup pecan halves, lightly toasted
- 1/8 tsp salt
- 1 tbsp butter
Instructions
- Toast the pecans: Place pecans flat on a parchment-lined baking tray and bake at 250°F for 10 minutes. Remove and let cool.
- Caramel sauce: Prepare a sheet tray with waxed or parchment paper. Combine the SumSweet+ Granular, salt, and cream in a medium heavy-bottomed saucepan over medium-high heat. Stir until the SumSweet+ dissolves, then keep stirring to prevent scorching. Watch for the color to change — as soon as it turns caramel brown, remove from heat and stir in the vanilla and butter. Continue stirring until the mixture thickens.
- Assemble: Stir in all the pecans and drop by teaspoonfuls onto the prepared sheet tray. Let cool completely at room temperature before removing from the parchment paper.
